Vegetable Beef Soup
This recipe is the perfect hot soup and a great way to eat any vegetables in the fridge, it is delicious because of the protein-rich beef and various nutritious vegetables, in addition to being a very versatile recipe, feel free to replace it with other vegetables that you may have on hand.
° 1 pound of meat
° 1 onion, cut into cubes
° 6 red potatoes, cut into cubes
° 5 carrots, finely chopped
° Half c water
° 1° (15 oz) can whole corn, drained
° 2 cups frozen green beans
° 1 bottle (46 fl oz) tomato and vegetable juice cocktail
° 1 cup water
° 1 teaspoon salt
° 1 teaspoon ground black pepper
In a saucepan over medium heat, cook beef, onion, and potatoes, covered, beef no longer pink and potatoes become tender 11 to 16 minutes.
Meantime, placing carrots & 1/2 c water in microwave-safe bowl & microwave for about 5 min To softened.
Drain the meat mixture and return to the saucepan with the carrots, corn, chickpeas, cocktail juice, water, salt, & pepper, also simmer for about 30 min, all flavors have mixed & soup is hot.
