Roasted Sweet Potatoes Recipe

We serve sweet potato cubes with cinnamon, nutmeg, butter, brown sugar, ginger, a pinch of salt and pepper, roasted to perfection. Great served as a side meal or delicious snack.

Ingredients:

    • Sweet potatoes, peeled and cut (3 pcs) into small cubes
    • 2 tsp olive oil
    • 1 tbsp butter
    • 1 tablespoon brown sugar (amount depends on sweetness)
    • 1 tsp of ground cinnamon
    • 1/4 tsp of ground nutmeg
    • Pinch of ground ginger
    • Sea salt, to taste

Directions:

    1. Preheat the oven to 350 degrees.
    2. Cover a baking dish with cooking spray.
    3. Peel the sweet potatoes cut them into small cubes, and put them in a baking dish.
    4. Use the microwave to melt the butter and pour it over the potatoes with olive oil, brown sugar, cinnamon, nutmeg, salt, and ginger.
    5. Add more sugar or cinnamon if desired. Toss to coat evenly.
    6. Bake in the oven for 60 minutes.
    7. Flip the sweet potatoes once or twice while roasting.
