Wonderful apple bread recipe. Soft, pull-out bread loaded with buttercream, apple, cinnamon, and delicious glaze you'll want to bake again and again.

Ingredients
Bread dough ingredients:
- 1 tablespoon active dry yeast
- 2 large eggs
- 1/4 cup granulated sugar
- 5 tablespoons unsalted butter, cubed
- 1/4 cup water
- 3/4 cup full fat milk
- 3 cups all-purpose flour, sifted
Apple Filling Ingredients:
- 1/3 cup granulated sugar
- 5 teaspoons cinnamon
- 4 cups peeled and grated apple
- Half a teaspoon of vanilla extract
- 8 tablespoons unsalted butter, 1/2 cup
Glaze Ingredients:
- 1/3 cup powdered sugar
- 2 2 tablespoons heavy whipping cream
- Half a teaspoon of vanilla extract
- 1/4 cup brown sugar, light
- 3 tablespoons unsalted butter, cubed
Instructions
To make apple bread:
- Cover two baking trays with parchment paper or butter sides or spray them with baking spray. Preheat oven to 350°F in step 6. In a small saucepan, add butter, milk, water, and sugar. Stir frequently and leave until the milk is warm and the butter has melted. (If the milk becomes too hot, let it cool until warm to the touch.)
- Sprinkle the yeast over the warm milk and stir. Cover the bowl and let the yeast activate and become foamy, about 5 minutes. Stir in 2 beaten eggs.
- Add the flour to the large mixing bowl, making a hole in the middle and add the warm milk mixture. Fold the dough until the dough is soft and smooth and does not stick to your hands or the bowl. (Tip: Add 1 tablespoon of flour at a time as needed so the dough doesn't stick to the bowl.) Cover the dough with plastic wrap and let it rise for an hour at room temperature.
- Transfer the dough to a generously floured work surface. Sprinkle the surface lightly with flour and, using a rolling pin, roll it into an 18" x 20" rectangle.
- In a small bowl, use a fork to mix the butter and vanilla. Spread the butter evenly over the rolled dough. Spread the grated or sliced apple evenly on the face. Combine cinnamon with sugar and sprinkle evenly over the dough.
- Cut the dough into 5 uniform long strips. Cut the strips into squares. Stack the dough, transfer to baking trays, and divide the dough between the two pans, stacking squares loosely on their sides. Cover pans with a towel or plastic wrap, lift 30 minutes. Bake uncovered at 350°F for 25-30 minutes, until bread is golden brown. Allow the bread to cool completely before applying the glaze.
How to make sweet baking glaze:
- In a saucepan, over medium/high heat, mix together butter, sugar, and vanilla. Bring it to a little boil. Add heavy whipping cream, stir and remove from heat. Set aside to cool.
- Once the glaze has cooled, add the powdered sugar. The glaze is set aside to thicken and then poured or brushed over cooled apple bread.

This recipe makes two loaves of apple bread.
I followed reciepe on the dough but my dough never raised. yeast was just bought expires in 22. dough was nice and soft not sticky at all. just chucked it. will start all over tomarrow. was so disapointed.
This was so good.. I thin sliced my apples and coated them with a little lemon and white sugar.. also used brown sugar, chopped walnuts with a pinch of salt on the bread.. I put the whole recipe in a deep lasagna pan. Used vanilla bean in the the glaze. Turned out really well.. almost like apple turnovers. Would have posted a pic but not much left lol 😂
I made this as written and it is seriously missing salt. Has potential but the lack so salt makes it very bland. May try again with the 1/2 tsp people recommend in the comments. Wish I had read those first….and probably also more cinnamon and sugar.

I just made for the second time your Pull apart Apple bread. It’s a great recipe, however it’s a bit bland. Shouldn’t salt be added?
I was wondering what step 15 meant when it said to preheat the oven to ____ at step 15… what did you mean by that?
